Intelligent Systems to Keep the Taste of the Sea Intact
We understand that transporting and preserving seafood at sea is a challenge. That’s why we implement specialized technology and protocols to maintain the highest standards of freshness.
Our infrastructure includes:
- Separate refrigerated and frozen chambers: Our cold storage systems are designed to preserve the freshness and quality of fish from the moment of embarkation. Refrigerated chambers maintain temperatures between 0–4 °C for fresh species, while frozen chambers reach up to -18 °C for products requiring long-term storage.
- Portable Saltwater Tanks: We have portable aquariums with circulating saltwater, designed to keep shellfish alive throughout the journey on board. These tanks replicate the natural conditions of the marine habitat, regulating temperature, oxygenation, and salinity.
- Insulated Boxes and Oxygenated Containers: Transportation from the point of origin to embarkation is carried out using specialized equipment: high-performance insulated boxes for fresh fish, and oxygenated containers with seawater for live shellfish.
- Real-Time Humidity and Temperature Control: In both refrigerated chambers and nurseries, humidity and temperature levels are continuously monitored using sensors connected to a central platform.
- FIFO Rotation and Batch Traceability: We strictly apply the FIFO (First In, First Out) method, prioritizing the use of the oldest product to prevent waste and ensure every dish is prepared with ingredients at their peak. Each batch is recorded with entry date, supplier, product type, and storage location, allowing full traceability from origin to the onboard kitchen.
Our technical team works closely with the chef and crew to ensure that each product arrives just in time and in perfect condition for preparation.
